SKUs let a buyer see assortment breadth, dead stock, and which items drive margin. A large SKU count is not automatically better; complexity raises inventory cost and shrink. POS and inventory reports by SKU are more useful than a single inventory dollar total. During diligence, match SKU lists to what is actually on the shelf.
